Today I propose a stir fry or a sautéed chicken dish with mushrooms and ginger. A dish with Asian flavors that takes us on a journey, easy and quick to make, economical, and very fragrant. You can serve it with rice or noodles, according to your preferences.

General:
 700 Chicken breast
 4 Sunflower oil (2+2)
 1 Onion
 4 cloves Garlic
 1 Ginger
 400 Brown mushrooms
 4 Green onions for serving (optional)
Marinade:
 1 Baking soda
 1 Cornstarch
 2 Soy sauce
Stir fry sauce:
 3 oyster sauce
 1 Sugar
 1 white vinegar

Prepare all the ingredients. Cut the chicken breasts into thin strips. Peel and finely slice the onion. Peel and chop the garlic. Peel the ginger and cut it into thin sticks. Clean the mushrooms and cut them in half or into quarters, depending on their size. Finely slice the green onion stems.

Place the meat in a bowl. Add all the marinade ingredients: baking soda, cornstarch, and soy sauce, and mix well. Set aside.

In a bowl, mix all the ingredients for the stir fry sauce.

Heat 2 tablespoons of oil in a large non-stick skillet over high heat. Add half of the chicken. Try to spread the meat out well, preferably in a single layer. Let the meat grill for 3-4 minutes before mixing. Then let it cook for another 2 minutes. Set aside on a plate and do the same with the remaining chicken.

Return the cooked chicken to the pan, add the onion, garlic, and ginger, and continue cooking for 1 minute, stirring.

Add the mushrooms and cook for another 3 minutes.

Add the stir fry sauce and cook for an additional minute, stirring.

To finish, serve immediately with rice or noodles, sprinkled with green onions.
