Today I’m offering you a chicken pasta dish with a creamy mushroom sauce. It is easy and quick to make, economical, and delicious. Perfect for a weekday evening when you don’t have time to linger in the kitchen.
Prepare the pasta Cook the pasta al dente according to the package instructions. Drain, reserving a cup of the cooking water.
Prepare the chicken mushroom sauce. Gather all the ingredients. Cut the chicken breasts into thin strips. Clean the mushrooms and slice them. Peel and chop the onion and garlic cloves. Chop the parsley. Heat a large skillet with 2 tablespoons of oil over medium-high heat. Add the chicken and cook for about twelve minutes, until it is cooked and golden. Season with salt and pepper. Remove to a plate. In the skillet, add another 2 tablespoons of oil and the mushrooms. Cook for 5 minutes, then add the onion and cook for another 2 minutes, stirring. Lower the heat a bit. Add pasta water, garlic, paprika, herbs, salt, and pepper. Mix and bring to a boil. Add the cream, parmesan, mix, and cook for one minute, allowing the parmesan to melt. Add the chicken and continue cooking for another 2 minutes, so the sauce thickens a bit.
Finish the dish by adding the pasta, mixing well, and cooking for 2 more minutes to heat them thoroughly.
Serve immediately, sprinkled with parsley and Parmesan.
