Carrot Soup à la Laurent Mariotte
Preparation of the vegetables Peel the onion and the carrots. Slice the onion and sauté it with a drizzle of olive oil in a pot until it turns golden.
Adding the broth Meanwhile, cut the carrots into thin slices. Add the carrots to the onion, pour in the vegetable broth, and let simmer covered for 15 minutes.
Add the lentils. Then stir in the lentils and let cook uncovered.
Cooking After 15 minutes, pour in the coconut cream, season with salt and pepper, and mix well.
Serve by placing in deep plates and generously sprinkle with fresh coriander leaves. Serve immediately.
