Carrot flans, yes, so good. Easy to make, to eat alone or as a side dish with meat or fish, such as cod.
Preheat the oven to 160°. Peel the carrots. Steam them; I used my steamer.
Put the carrots in a blender. Add the eggs and the cream along with three-quarters of the grated cheese. Season with salt and pepper.
Butter small gratin dishes and pour in the carrot mixture. Sprinkle with the remaining grated cheese and caraway seeds. Cook in a water bath for about 35 minutes.
