Discover this recipe for candied ginger. While we are used to buying them in stores, the homemade version is very accessible and easy to follow. All you have to do is get started! We particularly love these precious treats during the Christmas season.

 400 Fresh ginger
 320 Sugar
 Water

Preparation of the ingredients: Peel the ginger and cut into sections of 1/2 cm. Soak in cold water for 1/2 hour.

Change the water and bring to a boil for 5 minutes, change the water and repeat 2 more times (for a total of 3 boils); this somewhat tedious process allows for less pungent ginger.

Cooking Put 300 g of sugar with the ginger and cover with water. Bring to a boil and let it cook until the ginger is slightly translucent. If it is not the case at the end of cooking, add a little more water.

Rest Let the ginger dry and sprinkle it with about 20 g of remaining sugar.
