Butternut transforms by putting on its most delicious outfit: the waffle! Children will finally eat their vegetables with a smile and will ask for more. These butternut waffles can accompany a salad, cold cuts, and why not replace burger buns...
Preheat the oven to 170°C. On a baking sheet lined with parchment paper, place the butternut squash cut into pieces, drizzle with olive oil, and bake for 20 minutes. Place the roasted squash in a small bowl and mash it roughly with a fork.
In a second bowl, mix the flour with the baking powder. Add the eggs, milk, butternut puree, mustard, turmeric, chives, and salt. Mix, then incorporate the grated cheese before mixing once more.
Let the dough rest for 30 minutes before baking your waffles for 3 to 4 minutes.
To finish, the waffles can be frozen. Reheat for a few minutes in the toaster.
