 250 Mascarpone
 3 eggs
 60 light brown sugar
 1 pinch Salt

Crack the eggs and separate the whites from the yolks. Place the yolks in a mixing bowl and add the sugar. Whisk until the mixture lightens in color, then add the cream and continue mixing until you get a smooth cream.

Then beat the egg whites until stiff with a pinch of salt in another bowl. When they are firm, gently fold them into the mascarpone cream.

Finally, add 2 roughly crushed brownies per glass (or bowl), then distribute the mascarpone cream.

Keep in the fridge until ready to serve.

To finish, this dessert can be prepared the day before. Decorate with white chocolate shavings just before serving.
