Break the eggs into a mixing bowl and beat them with brown sugar.
Peel the banana and mash it into the mixture.
Squeeze the two yellow lemons. Dilute the cornstarch in the lemon juice and add everything to the previous mixture.
Pour the mixture into a saucepan and add the diced butter.
Cook over low heat for 5 minutes without stopping to stir. The mixture should thicken. Extend the cooking time by one or two minutes if necessary.
Let cool, then pour into an airtight jar.
To finish, serve with pancakes or brioche!
