For a 24 cm diameter tart pan. Preheat your oven to 200°. Line the tart pan with the dough and prick it with a fork. Place it in the refrigerator while preparing the cream.
Peel and core your apples. Cut them into small cubes. Set aside.
In a mixing bowl, whisk the eggs with the sugar, milk, cornstarch, and cinnamon. Mix well. Then add (optional) the apple brandy.
Remove the dough from the refrigerator and arrange the apple cubes on the dough. Pour the cream mixture over the top. Bake for about 35 to 45 minutes for me.
To finish Once the tart is baked, prepare the caramelized almonds. In a skillet, melt the butter, sprinkle with sugar. As soon as it begins to caramelize lightly, add the sliced almonds. Gently shake the skillet and watch closely as it can brown very quickly. Distribute the caramelized almonds over the still warm tart. And most importantly, enjoy; it’s a delight.
