A subtle blend of cocoa and kaffir lime in lovely cookies.
In a mixing bowl, combine the flour, sugar, almond powder, baking powder, and zest, and mix well. Set aside.
In another bowl, mix the eggs with the softened butter, lemon juice, and cream.
Add the reserved dry ingredients and mix. Divide the dough into two equal parts. In one part, add the cocoa and mix.
Divide each of the 2 parts into 4 pieces and shape into balls. Cover with plastic wrap and place in the fridge for 30 minutes.
Then flatten the balls slightly so that they can be layered. Roll out to a thickness of 5 millimeters.
To finish, cut out the chosen shapes and place them on parchment paper. Let rest in the fridge for 30 minutes. Bake in a preheated oven at 180° for 15 minutes. Allow to cool on a rack.
