Adobo chicken is a traditional recipe from the Philippines: the meat is marinated and served with rice. Here is the recipe to share with friends or family.
Peel and slice the onion and peel and chop the garlic.
Brown the chicken thighs in hot oil for a few minutes on each side. Set aside.
Cook the onion and garlic in oil. Add soy sauce, apple cider vinegar, sugar, and bay leaf. Let it reduce for about 10-15 minutes.
Add the chicken thighs, cover, and let simmer for 30 minutes.
To finish, serve immediately, accompanied by rice.
