Several times a year, I make this delicious dessert, a treasure of our cuisine! And of course, right now, it's cherry clafoutis, the king!

Prep Time20 minsCook Time45 minsTotal Time1 hr 5 mins
For the clafoutis
 1 Burlat cherries
 4 large organic eggs
 150 granulated sugar
 60 Almond flour
 60 Cornstarch
 1 clove Vanilla
 250 Whole milk
To line the mold
 20 Butter
 20 granulated sugar
Directions
1

In a mixing bowl, combine the eggs with the granulated sugar, almond flour, cornstarch, and the seeds from the split and scraped vanilla pod. Add the heavy cream and whole fresh milk.

2

Line the baking dish with butter and granulated sugar using a brush. Preheat the oven to 180°C (350°F).

3

Wash the cherries, remove their stems, then arrange them (with their pits) in the dish. Leaving the pits gives more flavor to the clafoutis.

4

Finally, pour the clafoutis batter and bake for 45 minutes in the oven, until the mixture is set and golden. Enjoy warm. Bon appétit!
