Delicious truffle potato recipe for the Christmas holidays.

Ingredients
 750 Potato
 300 Cantale
 20 Truffle
 3 Garlic clove
 2 Dried parsley
 3 Peanut oil
 Salt
 Pepper

Peel, wash, and slice the potatoes into thin rounds. Dry them in a clean cloth. Cut the cheese into slices. Set aside. Make truffle shavings. Set aside.

In a frying pan, pour in the oil, then add the potatoes and let them cook covered for 20 minutes over medium heat, stirring occasionally. Season with salt and pepper. Once the potatoes are nicely browned, add 2 minced cloves of garlic, the truffle, and the slices of cheese. Let the cheese melt without stirring, covered, for 5 minutes.

To finish, turn the truffade out onto a nice round dish and sprinkle with chopped garlic and parsley. Cut it like a cake. Enjoy.
