Buckwheat Pancake Recipe

I often prepare the batter the day before, so that all the ingredients mix well, and I adjust the consistency before starting the pancakes and crepes, often needing to add water to the buckwheat batter and milk to the wheat batter. The crepes and pancakes are often much better when the batter has rested properly.

 100 Wheat flour
 2 Egg
 2 Salt

In a mixing bowl, combine everything in order, without creating lumps, and add water until the batter reaches a good consistency.

On the cooking surface, add some fat, pour a ladle of batter, wait until it is well colored, and turn it to cook it, then add the ingredients you desire. Fold each edge toward the center and add a dollop of salted butter on top.

To finish, here are some ideas for filling your pancakes; any vegetables combined with cheese. Leeks, blue cheese or a similar cheese / Goat cheese-honey, mushrooms, egg, and ham / Egg, bacon, onions / Sausage, emmental cheese, tomato / Spinach, ham, emmental cheese, sour cream.
