Thyme syrup recipe – vanilla, star anise, cinnamon

Thyme is one of the plants richest in antiseptic and antiviral properties. And during this season, it is beautiful, vibrant green, not dry. I wanted to make a syrup. Thyme syrup is refreshing, soothing, aids digestion, purifying, helps eliminate parasites, antiseptic, antifungal, and muscle relaxing, useful for sore throats. You can also use it in your pastries or to caramelize meats. It's delicious.

Ingredients
 1 Fresh thyme
 40 Mineral water
 15 Brown sugar
 6 Honey
 1 clove Vanilla
 1 Star anise
 1 Ground cinnamon

Wash the thyme with clear water. Heat the water in a pot and bring it to a boil. Turn off the heat and add the thyme sprigs. Cover (this helps to keep all the volatile and beneficial oils in the infusion) and let steep for 30 to 40 minutes.

Strain and return the infusion to the pot, adding the sugar, star anise, cinnamon, vanilla (seeds + pod), and honey.

Cook over low heat for 30/40 minutes. Skim off any foam. When the syrup begins to thicken, turn off the heat. Let it cool and fill bottles or small containers. (Wash them with boiling water before filling).

To finish, refrigerate for a few hours to fully appreciate the spices and enjoy.
