Melt the chocolate in a pot over a water bath until it reaches 50-55°C. Then remove from heat.
Place the chocolate in an ice bath until its temperature drops to 28-29°C.
Then place the chocolate back in a hot water bath to raise the temperature to 31-32°C.
Fill the chocolate molds, remove the excess. And let them rest in the refrigerator for 1 hour.
To finish, unmold the chocolates.
