Here is the recipe for garlic-smashed new potatoes, perfect for a delicious accompaniment. This recipe made with potatoes, rosemary, and garlic is quick to prepare; the longest part of this recipe is waiting for the lovely golden color during cooking.
Pre-cook the potatoes for 20 minutes in boiling water.
Peel and remove the germ from the garlic cloves.
Preheat your oven to 210°C (gas mark 7).
Drain the potatoes and arrange them on a baking sheet lined with parchment paper.
Lightly mash the potatoes using the back of a tablespoon.
Squeeze the garlic over the potatoes, drizzle with a splash of olive oil.
To finish, season with salt and pepper and sprinkle with fresh rosemary, then bake for 20 to 30 minutes.
