Delicious almond balls that I flavored with orange blossom.
Preheat your oven to 180°C.
Separate the egg white from the yolk. Beat the egg white until it becomes frothy. Add the almond powder, sugar, and orange blossom water. Mix everything together until you achieve the consistency of modeling clay.
Whip the egg yolks and add the pine nuts. Form small balls the size of a walnut (20g) and roll them in the egg yolk mixture and the pine nuts. With your oiled hands or not, roll them again to incorporate the pine nuts into the dough.
Place the meatballs on parchment paper or a silicone baking mat.
Finally, bake for about 25 minutes. Let cool on a rack. Store in a metal container like holiday cookies.
