A cookie recipe.
Pour the flour and sugar into a mixing bowl. Mix. Add the soft butter cut into cubes and the honey. Mix until well incorporated. Add the egg and mix until you can form a ball. The dough is a bit "creamy"; it will harden in the cold.
Wrap it in plastic wrap and place it in the refrigerator for 1 hour.
Preheat the oven to 180°C.
Roll out the dough to a thickness of 2 to 3 mm. Cut the dough using a cookie cutter.
Place the cookies on a baking sheet lined with parchment paper.
Brush with egg yolk and place half a hazelnut on top.
Bake for about 10 minutes, they should be well golden.
To finish, let cool.
