Today I'm offering you a new cookie recipe. They are delicious, not too sweet, crispy and chewy, with a nice butterfly shape. Perfect for gifting.
Prepare the dough. In a bowl, mix the egg and yogurt with a spatula. Add the sugar and vanilla sugar and mix again to incorporate them. Then do the same with the oil. Add the baking powder and half of the flour and mix with the spatula until the texture is smooth. Then add the remaining flour in two batches and start mixing the dough by hand until you achieve a smooth and soft but not sticky dough.
Preheat the oven to 180°C (static heat).
Divide the dough into 2 and make 2 balls.
Roll out the first piece of dough to make a circle about 3 mm thick. Using a cookie cutter with a diameter of 8 cm, cut out circles.
Form knots. You can see the detailed process in the video: https://www.youtube.com/watch?v=hVKsafXD0KU
Place the cookies on a baking sheet lined with a silicone mat or parchment paper, spacing them apart slightly.
Start again until the dough is used up.
Bake and cook for 15 minutes or until the cookies are lightly golden.
Sprinkle with powdered sugar.
To finish, store in a metal cookie tin.
