These cheese tarts are divine, to die for! To keep it simple, they are the best I have ever made and eaten so far, and I can tell you that I will never let go of this recipe!

For the dough
 150 Flour
 65 Butter
 1 pinch Salt
 Cold water
For the topping
 250 Milk
 100 Grated Emmental (or Gruyère, Comté, Beaufort)
 30 Butter
 30 Flour
 1 Egg
 1 pinch Grated nutmeg (optional)
 Ground pepper
 Salt

Prepare the dough: pour the flours and salt into a mixing bowl (or into your food processor for efficiency). Mix. Add the butter cut into cubes and knead. Add a little water as needed to form a ball. Roll out the dough to a thickness of 2-3mm. Cut out 8 circles and line the tartlet molds. Prick the dough with a fork. Set aside. Next, prepare the filling: make a béchamel by mixing butter and flour in a saucepan over low heat. When the mixture is smooth, pour in the boiling milk. Add nutmeg, pepper, and salt. Mix well until the consistency is thick. Off the heat, incorporate the grated cheese and then the egg. Pour into the molds over the dough. Bake for about 25 minutes (+ or - depending on the oven) at 200°c. Serve the tartlets hot, accompanied by a green salad. They can also be reheated in the oven for about ten minutes at 200°c or in the microwave grill. Enjoy your meal!

    Not bad... It's good, nothing more. Overall, it's bland, and yet the cheese has more flavor than the other variety. I don't see what one could add to make this cheese tart less ordinary...

    very good and very quick to make indeed (My suggestion: incorporate the cheese into the very hot béchamel; there were some unmelted pieces left (personally, it didn't bother me, but it might bother others))
