Super fluffy cream puffs.
Preheat the oven to 170°C.
In a saucepan, bring the water, milk, sugar, a pinch of salt, and butter to a boil until the butter is completely melted.
Off the heat, add the flour and mix until you obtain a smooth mixture with a spatula.
Place the pot back on low heat and dry out the dough for 3 minutes (this will remove any moisture).
Place the dough in the bowl of the mixer and using the paddle attachment, cool the dough (or alternatively in a mixing bowl with a spatula, mix the dough to cool it down).
Add the eggs one by one until you obtain a smooth and shiny dough and have a collar.
To finish, place in a piping bag fitted with a plain nozzle and pipe your pastry puffs. Add the pearl sugar and bake for 20 to 25 minutes without opening the oven, otherwise your pastry puffs will deflate.
