 1 Aged goat cheese log
 225 Flour
 25 Almond powder
 125 Softened butter
 1 Egg yolk
 1 Zucchini
 Rosemary
 Olive oil

Preheat the oven to 180°C (350°F). In a mixing bowl, combine the flour, almond powder, and salt. Add the softened butter, cutting it into small pieces.

Knead with your fingertips, and when the ingredients start to come together, add the egg yolk. Using a wooden spoon, bring everything together to form a ball of dough.

Roll out on a floured surface to a thickness of 1 cm. Cut out circles with a cookie cutter, the size of the refined log.

On half, cut out eyes and a mouth to mimic emoticons. Place on a baking sheet lined with parchment paper and bake for 15 minutes. When the cookies are golden, remove from the oven and let cool.

Slice the goat cheese fairly thinly. Do the same with the zucchini, drizzling with olive oil and sprinkling with rosemary.

Place the slices of zucchini on the whole cookie rounds. Top with cheese and close with the cookie cutouts.

Lightly reheat in the oven (3-4 minutes) and enjoy.
