A little marvel, these cinnamon and honey cookies are perfect for comforting you.
In a bowl, mix the egg, the egg white (keep the yolk for glazing), the oil, the sugar, the honey, the cinnamon, the baking powder, and the salt with a fork. Add the flour in three batches. Mix until you obtain a smooth dough that will be soft and slightly sticky. Cover the bowl and place it in the refrigerator for 1 hour.
Preheat the oven to 170°C, static heat. Take 1 teaspoon of dough and roll it between your hands to form an oval. Place on a tray lined with parchment paper or a silicone mat. Repeat until all the dough is used up.
To finish, space the cookies on the baking tray as they will puff up during baking. Brush with egg yolk. Bake for 15-17 minutes or until the cookies are golden. Store in an airtight cookie box to preserve their crispness.
