For the cookie
 250 Honey
 125 Wheat flour
 125 Buckwheat flour
 50 Candied orange peel
 1 Egg yolk
 15 Water
 Spice (green anise, star anise, crushed vanilla, cinnamon, ginger, cardamom...)
For the icing
 90 Icing sugar
 1 Egg white
 Lemon juice

Heat the honey with the water. Mix the flours in a large bowl. Add the cooled honey, the peels, and the spices. Mix well to obtain a thick and smooth dough. Lastly, add the baking soda and mix. Leave the bowl, covered with a cloth, at room temperature for 24 hours.

On parchment paper (and possibly floured), roll out the dough to a thickness of 1 cm. Cut shapes using a cookie cutter or a cardboard template. Carefully place the figures on a baking sheet lined with parchment paper. Brush with egg yolk using a brush. Bake for 15 minutes in the oven at 190°C (thermostat 6). Allow to cool before proceeding to the icing.

To finish, vigorously mix the egg white with the sugar, then beat with a mixer until a firm consistency is achieved. Add the lemon drops. Decorate the figures using a piping bag. Allow to dry before storing them in a box.

    Good Good recipe. However, if I may say so, I found them a bit hard... My suggestion: I would add a little more spice next time :)

    Tip top! Super recipe For the frosting, I just used water and powdered sugar because I didn't understand the purpose of egg white?
