The mirabelles are only available for a short time, all round and filled with sunshine, with a rosy blush on one side, and we make the most of it! Here is a slightly revised clafoutis...
Preheat the oven to 180 °C. Rinse and then pat dry the plums.
Whisk the eggs in a bowl with the sugar. Add the flour in three parts, then the almond puree, and finally the pistachio puree. Gradually pour in the almond milk.
Spread the plums in a baking dish and pour the batter over them. Slide the clafoutis into the oven and let it cook for 40 minutes (it should still tremble slightly in the center).
Garnish with some fresh plums. Serve warm or wait for it to cool down.
