Recipe for Strawberry Mousse and Ladyfinger Cookies

Strawberry mousses, ladyfinger cookies to enjoy the arrival of these small, fragrant red fruits bursting with sunshine. I wanted to pair them with ladyfinger cookies soaked in a strawberry syrup to add a bit more indulgence to these mousses.

Ingredients
 250 Strawberry
 20 Liquid cream 35
 3 Gelatin sheets
 1 Strawberry syrup
 10 Water
 Ladyfinger
Directions

Wash and dry the strawberries. Remove the green tops.

Soak the gelatin in a bowl of very cold water. Cut the strawberries into quarters. Blend them with the sugar.

Heat a little strawberry puree. Add the drained gelatin. Mix well to dissolve the gelatin.

Whip the cream until fairly stiff. Gently fold it into the strawberry purée.

Soak the cookies with the strawberry and water mixture. Place a halved cookie at the bottom of each cup. Distribute the mousse over the cookies.

To finish, refrigerate for at least 3 hours. At the time of serving, decorate with strawberries and a mint leaf.
