A quick and easy recipe for small chocolate and orange charlottes. With its base of charlotte biscuit, no baking is required, making pastry a piece of cake!

 65 Chocolate dessert
 10 Butter
 10 Sugar
 1 Orange (preferably organic)
 250 Water
 1 Vanilla sugar or 7 g of sugar

Preparation of chocolate mousse. Separate the egg whites from the yolks. Melt the chocolate and butter in a double boiler or in the microwave with a bit of water. Zest the orange until you have one teaspoon.

Using a whisk, mix the egg yolks and sugar, then add the orange zest. Once the chocolate is melted, add it to the mixture of egg yolks and sugar.

Using a mixer, beat the egg whites until stiff peaks form, then gently fold them into the chocolate mixture.

Preparation of the syrup. Heat 250 ml of water and then add the vanilla sugar. Mix until the sugar dissolves.

Using a brush, moisten the inside of the small molds without removing them from their containers.

Place 2 tablespoons of chocolate mousse inside the small charlottes and decorate with a segment of orange and some chocolate shavings. Refrigerate for 4 hours, then unmold.
