Recipe proposed by Anissa, former finalist of the show "The Best Pastry Chef." Photography: Guillaume Czerw. Found in the book "Sugar-Free Desserts and Pastries by Anissa."
Mix the flour, baking powder, sugar, and salt thoroughly. Make a small well and add the whole eggs along with a third of the milk, then whisk vigorously while staying in the center of the bowl.
Once the batter has thickened, add another third of the milk. Mix, then pour in the final third. When the milk is fully incorporated, add the melted coconut oil, but not hot.
Preheat and lightly grease the waffle maker with a brush and coconut oil. Pour a ladle of batter, then close the lid. Let cook for about 4 minutes. Feel free to check the cooking by opening the waffle maker briefly.
Once the waffles are removed from the mold, place them on a rack so they stay crispy. Enjoy your meal!!!
