It's an excellent recipe for cream puffs. In itself, it’s easy and quick, but you need to pay attention to the presentation. Instead of pastry cream, you can also prepare a chocolate cream or simple whipped cream: it will be really light!

Prep Time40 minsCook Time20 minsTotal Time1 hr
For the cabbage
 ¼ Water
 ½ Salt
 1 Sugar
 75 Butter
 150 Flour
 4 Egg
For the pastry cream
 50 Sugar
 250 Milk
 15 Flour
 1 Vanilla sugar
Directions
1

Preparation of choux pastry Boil water, salt, sugar, and butter. When boiling, add the flour all at once. Cook until the dough pulls away from the pot. Remove from heat. Add the eggs one by one. Mix well.

2

Cooking the doughnuts Pipe them using a pastry bag with a round tip onto a baking sheet lined with parchment paper. Bake at 150°C. When they have puffed up, increase the temperature to 200°C. Do not open the oven during cooking. Once cooked, open the oven door for 5 minutes. Remove them from the oven but let them cool on the baking sheet.

3

Preparation of pastry cream Make pastry cream in the microwave by whisking all the ingredients together in a suitable microwave-safe container (with a lid). The mixture needs to be smooth.

4

Close the lid and cook for 2 minutes 30 at maximum power. Open immediately and give the mixture a stir. Cook again for 2 minutes 30. Open, stir again, and let it rest covered for 5 minutes. It thickens as it cools.

5

Stuffing the cabbages When the cabbages and creams are cold, fill the cabbages using a piping bag.

Pastry cream turns out quite good despite being very simple and quick to make. The choux are a bit dense. Overall very satisfactory.
