Peel and wash the potatoes, then slice them.
Place in the bowl, then pour in the milk and salt.
Remove the measuring cup, then cook for 25 minutes / in reverse / at speed 1 / at 95°C.
Add the sour cream, then mix for 10 minutes / in reverse / at speed 1 / at 90°C.
Finally, season with salt, pepper, and add nutmeg, then mix for 2 minutes at speed 5. Garnish with chives and serve hot.
