Mini seasonal tarts for the most beautiful of Mommies!

Ingredients
 80 organic spelt flour
 30 organic hulled barley flour
 40 organic fresh butter
 1 organic brown sugar
 1 pinch unrefined salt
 2 cold water
 24 fresh local raspberries
 8 country cherries
 8 small local strawberries
 8 fresh sheep's milk cheese
 acacia honey

Prepare the dough for the tartlet bases. In a mixing bowl, combine the flours, salt, and sugar. Add the very cold butter cut into cubes. Mix to incorporate it well into the flours. Gradually add water to form a smooth and homogeneous dough. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.

Preheat your oven to 180°C. Roll out the dough using a rolling pin. Cut out 8 small discs using a cookie cutter. Place on a baking sheet lined with parchment paper. Put the discs on the sheet and bake for 15 minutes. Remove from the oven and let cool.

To finish, mix the fresh cheese with 2-3 teaspoons of acacia honey. Place the cheese in the center of each tartlet shell. Decorate nicely with red fruits. Sprinkle with spice flowers. Serve immediately.
