 250 Type 55 flour
 75 Sugar
 125 Peanut oil
 1 pinch Ground cinnamon
 1 Lemon zest (optional)

Preparation of the dough Make a well in the flour, pour in all the ingredients, and mix by hand until you have a smooth dough.

Shaping: Make balls 2 to 3 cm in diameter and place them on a greased baking sheet or on a sheet of parchment paper.

Cooking: Place in the oven at 150 °C for about 4 to 5 minutes, then increase the temperature to 200 °C.

Remove them when they are still white, just before they turn golden, as it changes very quickly. Sprinkle with ground cinnamon and wait for them to cool before eating.

    This recipe was quite successful; however, I used half the amount of sugar compared to the amount of flour. 75 g seemed insufficient to me.

    Excellent the montecaos It's one of my favorite cakes. It's quick to make. I could add that it's better the next day when they have slightly hardened. A true delight.
