Enjoy this vegetarian watercress soup ready in just 20 minutes! Rich in iron, vitamin C, B9, fiber, and low in calories, it's a true weight-loss ally. The potato watercress soup recipe is very easy and quick to prepare for a gourmet starter!
Preparation of the vegetables: Peel, wash, and cut the potatoes into small pieces. Peel and finely chop the shallot or onion.
Wash the 2 bunches of watercress. Cut the stems.
Cooking Heat the butter in your pot. Add and brown the shallot or onion.
Place the watercress and let it simmer for 5 minutes. Mix. Cover with water. Add salt.
Add the chopped potatoes. Cook them for 10 minutes in the pressure cooker or 15 minutes without.
Seasoning and Blending Pour in the liquid cream. Blend. Add salt and pepper to taste. Enjoy.
