 30 Butter
 100 Flour
 50 Milk
 1 pinch Nutmeg
 4 Thinly sliced ham
 2 Egg
 5 Milk
 Breadcrumbs
 1 Frying oil (or sunflower oil)
 2 pinches Salt and pepper

Preparation of the béchamel sauce In a saucepan over low heat, melt the butter. Add the flour, stirring continuously. Once the mixture is smooth, gradually incorporate the milk. Season with salt, pepper, and add a pinch of nutmeg. Remove from heat.

Rest Add the chosen cheese, along with the strips of cured ham. Place this mixture in the refrigerator for a minimum of 2 hours.

Preparation of the breading Prepare the breading by mixing the 2 eggs and half a cup of milk in a bowl. In a second bowl, pour a good amount of breadcrumbs. Take the mixture out of the refrigerator and form small balls that you dip into the egg and milk mixture, then into the breadcrumbs. Place these nearly ready croquettes on a sheet of aluminum foil.

Baking Preheat the oil. Submerge the croquettes in the boiling oil until they are golden brown. Then remove them from the oil. Let them cool slightly.

    Small problem I followed the recipe to the letter, but they all fell apart during frying. My suggestion: Can anyone help me please?

    Very good This is a very good recipe that is eaten very quickly and can be part of an appetizer. My suggestion: However, reconsider the way to make the béchamel; too much flour creates lumps and it is still a bit greasy.

    Delicious!! Excellent recipe!! These are the same as in Spain! :-) However, regarding the flour, you shouldn't use as much! 30g of flour for 30g of butter, otherwise the dough will be lumpy! Thank you for this excellent recipe, I am often asked to make it again :-)
