Perfect to accompany grilled meat, broccoli gratin is always a great idea!
Detach the florets from the broccoli, slice the stems, wash them, and cook in boiling salted water until they blanch (about 5 minutes). Drain and set aside.
Heat the butter, and when it has melted, add the flour and stir continuously until it forms a smooth mixture (about 2 minutes).
Add the milk and stir over low heat until the béchamel thickens.
Off the heat, incorporate into the béchamel 2 pinches of nutmeg, 3/4 of the grated cheeses, the 2 egg yolks, salt, and pepper. And mix well.
Pour the broccoli into a previously buttered dish, then pour the béchamel on top, spread the remaining cheese, and place a few knobs of butter on top.
To finish, place in the oven (under the broiler) for about ten minutes, serve hot.
