An ideal recipe for a brunch!
Start by preparing the pancake batter. Place the flour, sugar, and salt in a bowl. Make a well, add the eggs, and mix. Then gradually add the oil and milk while mixing to avoid lumps. Let the batter rest for at least an hour.
Cook the pancakes. Grease a 25 cm diameter pan using absorbent paper soaked in sunflower oil. Heat over high heat. Once the pan is hot, pour in the batter using a ladle so that it covers the entire surface of the pan. Add more if needed. Cook for 1 minute on each side. Repeat until there is no batter left.
Next, make the omelette. Beat the eggs in a bowl with a fork until a little froth appears on the surface (the omelette will be fluffier). Add the milk and mix.
Melt a knob of butter in a pan, ensuring it is the same diameter as the one used for the pancakes. When the pan is hot and the butter has melted, pour in the eggs. After 1 minute of cooking, reduce the heat and let it cook on low. When the center of the omelet is still wet, place a slice of ham in the center and cover with grated cheese.
To finish, pour the omelette onto a crepe, then return it to the hot pan for 1 minute. Fold the crepe in half and enjoy while hot.
