A very fresh, quick, and no-cook dessert.
In a mixing bowl, beat the mascarpone with the egg yolks, 40 grams of sugar, and the amaretto. Set aside in the refrigerator.
In another bowl, beat the egg whites with a mixer. When they become foamy, gradually add the rest of the sugar to stiffen the egg whites. They should form stiff peaks. Then gently fold them into the mascarpone cream. Return to the refrigerator.
To finish, make a very strong coffee and then add a little water. Dip the ladyfingers in the coffee, then place them at the bottom of the dishes. Pour a little cream, add more dipped ladyfingers, then more cream. Level it out. Refrigerate for 1 hour. Wash the fruits. Cut the apricots and strawberries into quarters, and place them on the cream, along with the other fruits. Return to the refrigerator until serving. Dust with powdered sugar just before serving.
