Heading to Brazil, a dream destination! Treat yourself to pão de queijo, a delicious Brazilian cheese bread that will delight your taste buds. We enjoyed tasty cheese cassava rolls with a green salad. My little ones ate everything. This easy recipe will enable you to prepare these fluffy and savory bites, perfect for appetizers or as a side dish. Made mainly with cassava flour, egg, and cheese, these rolls have a unique texture: crispy on the outside and soft on the inside.
Heat 5 tablespoons of salted water. Pour the cassava flour into a mixing bowl. Add the hot water and gently mix by hand, crumbling with your fingers, until all the flour is moistened.
Heat the oil. Add it to the wet flour. Mix with a wooden spoon.
Add 60 g of yogurt. Mix by hand. Crack the egg into a small bowl and beat it with a fork, then add it to the mixing bowl. Knead until the dough is soft enough to form balls.
Incorporate the grated parmesan and emmental. Mix. Taste to check the seasoning.
Preheat the oven to 230°C (thermostat 7). Roll pieces of dough between the palms of your hands to form balls about 4 cm in diameter.
To finish, place a sheet of parchment paper on a baking tray. Arrange the meatballs on top. Reduce the oven temperature to 180°C (thermostat 6). Bake for about twenty minutes, until the meatballs have puffed up and are golden. Serve hot or warm.
