Both indulgent and light, this dish of creamy goat cheese mashed potatoes with rich flavors is perfect for your warm appetizer in winter.
Peel the potatoes, cut them into cubes, and place them in a pot of salted cold water. Bring to a boil and cook for 12 to 15 minutes. Drain the potatoes and mash them.
Put the puree in a saucepan and cook for 2 to 3 minutes, stirring constantly to dehydrate the potatoes.
Press the goat cheese through a strainer. Whisk together hot milk and butter. Stir the milk, butter, cheese, and parsley into the puree.
To finish, season with nutmeg, salt, and pepper.
