To make a smooth custard delicately flavored with vanilla, here is an easy and foolproof recipe! You can tell that your custard is ready when it coats the back of the spoon.

 50 Milk
 3 Egg yolk
 3 Sugar
 1 clove Vanilla

Split a vanilla bean in half and scrape out the seeds with a knife. Add them to the milk and heat until it simmers.

Whisk the sugar with the egg yolks until pale, then pour the hot milk over it while vigorously whisking.

To finish, thicken over low heat while stirring with a wooden spoon. The custard is cooked when it coats the back of the spoon.
