Preheat the oven to 180°C.
Roll out the pastry on a floured surface and line a tart pan. Prick the bottom with a fork. Refrigerate.
Wash the leeks and slice them thinly. In a frying pan, sweat the leeks with the butter for about 5 minutes. Let cool slightly.
In a mixing bowl, beat the eggs with the cream, add the crumbled cheese and incorporate the leeks, season with salt and pepper, and mix well.
Finally, pour the leek mixture into the pie crust and bake in the oven for about 40 minutes, until the top is golden.
