Discover my homemade Provençal basil sauce recipe! Mainly used for soup, this Provençal cousin of Italian pesto can be used in pasta, salads, or served with grilled meat! A traditional recipe made with basil.

 30 Garlic

Mix the ingredients for the pesto. Start by washing the basil under a stream of cold water. Peel the garlic and remove the indigestible germ in the middle. Put everything in a mortar, add the olive oil, and crush the garlic.

Pound the basil leaves and continue to mash everything together. Mashing helps to release the maximum amount of aromas.

To finish, you can put everything through a grinder. And that’s it!

    A well-known recipe from the region and its famous basil soup. I have and use the marble mortar and wooden pestle that my mother used, and before her, my grandmother. The pestle must have been changed more than a century since the mortar has been in the family, but it is these utensils and the technique they require that also give the unique flavor to the basil soup.
